Does anyone make this?

I had some the other weekend at a function and would love a great recipe.

It had corn, black beans, red onion, avocado, and other stuff I can't remember.

I love that salsa. And corn salsa, and just about any kind of salsa. We are having home made nachos for dinner. Does any one have a good adobo sause. The one I made for our carne asada last week sucked. I got it off the Food Network.

Issac wish I knew one. I made a great carne asada last week but no adobo sauce.

Sag that looks yummy but the one I had did not have Italian dressing on it and it had avocado. Hmm

2 tablespoons red wine vinegar
1 1/2 to 2 teaspoons hot sauce
1 1/2 teaspoons salad oil (or olive oil)
1 clove garlic, minced
1/8 teaspoon pepper
1 firm-ripe avocado
1 (15 ounce) can black-eyed peas
1 (11 ounce) can whole kernel corn
2/3 cup thinly sliced green cilantro
1/2 pound Roma tomatoes, coarsely chopped
Salt
Small can pitted black olives
1 tablespoon of cumin
1 bag tortilla chips (or 2 cups thinly sliced cabbage, for salad)

In a large bowl, mix vinegar, hot sauce, oil, garlic and pepper.

Peel, pit and cut avocado into 1/2-inch cubes. Add to vinegar mixture
and mix gently to coat.

Drain and rinse peas and corn. Add peas, corn, onions, cilantro, and
tomatoes to avocado; mix gently to coat. Add salt to taste.

Serve pea mixture with chips as an appetizer, or add cabbage and mix
to make a salad.

I'm glad somebody posted the recipe, because it sounds good. And I wasn't really associating cowboy recipes with something good.

Except I'd substitute something for the black eyed peas. Not my favorites.

Black eyed peas are my Grandma. Taste doesn't matter. They are her. Love.

Cassandra, what did you marinate your meat in?

Lemon juice, lime juice, one beer and garlic and onion. I don't have a specific recipe with exact measure. Unfortunately I don't cook much like that. :para

Put in black beans instead. This is so great with some corn chips. :)
