I had a quesadilla. The filling was a cream cheese/avocado mixture with a bit of sharp cheddar & refried beans. And I topped it with a poblano pepper, home made pico de gallo & grilled pineapple.

It was actually very tasty. :yum

And then I had teddy grahams for dessert!

Is there any other kind Rev. ;)

Lola can I ask why you chose to go vegetarian?

McLovin
03-18-2008, 06:22 PM
I chose it for health reasons. :yep It has really help me lose some extra weight. I was 15lbs heavier last November.

Also, I have eaten meat probably 3-4x in the past 5 months - but for the most part I'm really strict about it.

It really has helped me cut out fast food from my diet almost completely. :yep Which could be why I'm a size smaller now. :lmao

Lola that is great. I try to make one vegetarian meal per week. Do you make it for your entire family?

McLovin
03-18-2008, 07:17 PM
With my schedule I don't cook too much. I fix. :para

When I do actually cook something specific I try to cater to the people in my family that eat meat. :yep But, I do get a way with fixing a lot of meat-free meals. :lmao

Easter dinner.

We're trying something new this year; lamb steaks. Then your usual potatoes, corn, salad, rolls, and banana cream pie for desert.

I don't care for lamb, but growing up in the south we didn't eat it much. I care less and less for beef these days, but I still like chicken and fish a LOT.

Avocados do EVERYTHING.

They are so good for you.

For lunch, I just had some homemade guacamole with Pepperidge Farm Snack Sticks, and some Cranberry Pomengranite juice with club soda.

Then I topped it off with a shot of Robitussen.

Bunny is good...taste like chicken...that's part of our meal tonight, just shot 2 of them this morning...cotton tails of course....tails removed before cooking...skin off too...I have a cool method of skinning them...

Avocado anything. :yum

Lamb is very popular here. Especially around the holidays. I'd say the most popular form of it here is something we call pinnekjøtt which translated means stick meat. That's because it's boiled with small pieces of wood (ash I think) tossed in to flavor it. The meat has been salted and dry cured prior to boiling. Fantastic stuff, but very greasy like Wabby said.

I don't think I would like it then. I have never tried duck either, and they say it is greasy too. As for liver and onions, I tried it and didn't like it.

Hubby grilled our lamb steaks. They were so tender. :grub

Icy; I think Duck is rather dry.

I love seafood, but octupus grosses me out.
