Buffalo Wings

Sauce # 1
1 bottle Franks Red Hot Buffalo Wing Sauce
1-2 Bottles BBQ sauce depending on taste
1-2 cups honey depending on taste
Garlic to taste (optional)
Mix together in a bowl first adding one bottle of BBQ sauce the if needed the other. Same with the honey.

Seperate into two bowls
In one bowl dip the chicken (either wings, drummettes, or strips) making sure it is completely covered.
Place the chicken on a backing sheet of casserole dish and pour some sauce over them.
Bake at 350 until the chicken is done.
Remove and pour some more sauce over the chicken (use the unused bowl for this) Be sure to save some for dipping if needed.
Serve with celery and blue cheese dressing.

Just a note I was told by friends that these wings are better than Hooters:ohyeah :flame

Here is another one that is really good

Beer-Butt Chicken

Whole chicken
1 can beer (use a good kind or it will not taste as good) you can also substitute root beer, coke or Dr Pepper instead
1 cup melted butter
Rosemary Garlic seasoning

Mix the garlic and butter
Take the whole bird and gently lift the skin up and rub the butter mixture under the skin. Lay the skin back down
Now either drink or pour out about half the can of beer/soda and then insert the cand with the remaining beer/soda into the birds cavity
Place on a grill (or on a backing sheet if using an oven) and cook till chicken is done. The skin will harden sealing in the juices.

If you do this in an oven, put the oven on about 200 or 250 and cook for several hours.
If on the grill also cook for several hours checking to make sure it is staying hot enough (between 200-300 degrees)

Soft Fried Potatoes and Sausage

Cut 10-12 potatoes into cubes and put them into a large skillet with enough oil to cover the bottom. Add diced onions and garlic to taste ( I love garlic so I usually add lots)
Cook over medium heat adding water as needed till the potatoes are soft.
If you are using link sausage (like eckridge) then cut if length ways then cut into small pieces, If you are using ground sausage then brown it first.
I prefer deer sausage for this
Add the sausage to the potatoes and heat till hot.
Serve with garlic bread for a filling meal.

Pizza Pasta

1lb of macroni noodles
2 pkgs pepperoni
1 can Spaghetti sauce
1 can tomato sauce
1 can mushrooms
1 Bell Pepper
1 Onion
Garlic to taste
2 cups Mozzerella cheese

Boil the noodles like normal and while that is being done dice the onion and bell pepper.
Preheat oven to 350
Put the noodles in a casserole dish and add pepperoni, spaghetti sauce, tomato sauce, mushrooms, onion, bell pepper, and garlic.
Cook for 30 minutes
Add cheese to the top and cook for an additional 10 minutes.
Remove and serve with garlic or french bread.

Just in case you don't want to use canned spaghetti sauce.

Spaghetti Sauce #1
8 large fresh tomatoes, diced into small pieces
1/2 cup olive oil
8 cloves fresh garlic, chopped or minced
3/4 cup fresh basil, minced
1/2 teaspoon salt
1 teaspoon fresh ground black pepper
1/4 teaspoon crushed red pepper flakes

To cook sauce, heat olive oil over medium heat in a large iron skillet or heavy saucepan.
Add garlic and cook until tender.
Add fresh tomatoes and cook until heated through.
Stir in basil, crushed red pepper, black pepper and salt.
Serve sauce over cooked spaghetti or other italian pasta and top with parmesan cheese.

Spaghetti Sauce #2
2 large onions, chopped
2 medium green bell peppers, chopped
1 cup chopped celery
3-4 garlic cloves, minced
2 tablespoons olive oil
2 lbs ground beef
1 (4 ounce) can sliced mushrooms, undrained 3 (6 ounce) cans tomato paste
1 (16 ounce) can whole tomatoes, undrained and coarsely chopped
3 (8 ounce) cans tomato sauce
2 tablespoons worcestershire sauce
2 teaspoons chili powder
2 teaspoons dried oregano
1 teaspoon dried Italian seasoning
1 teaspoon salt
1 teaspoon ground cinnamon
2 teaspoons vinegar
1/4 teaspoon curry powder hot sauce (about 3 drops)
2 bay leaves
1/2 cup water
1/2 cup Burgundy wine (or other dry red wine)

Saute onion, green pepper, celery, and garlic in hot oil in a large pot until the vegetables are tender.
Add in ground beef; cook until meat is browned, stirring to crumble the meat; drain well and return to pot.
Stir in the next 15 ingredients; cover, lower heat and simmer for 1 hour, stirring occasionally.
Take out bay leaves; stir in Burgundy wine.
On individual plates, spoon sauce over cooked spaghetti; sprinkle each serving with cheese, if desired.

Spaghetti Sauce #3
1 lb lean ground beef
1 lb hot Italian sausages
3 tablespoons olive oil
1 tablespoon basil
2 teaspoons oregano
1 bell pepper, finely chopped
1 onion, finely chopped
3 cloves garlic, finely chopped
1/2 bunch scallions, finely chopped
1 (30 ounce) can Italian tomatoes
1 (12 ounce) can tomato paste
36 ounces water
1 tablespoon sugar
2 teaspoons salt
2 bay leaves

In heated heavy skillet break up ground beef and sausage cook chopping up large pieces til meat is no longer pink, drain off fat.
Saute seasonings and vegetables in olive oil for 3 to 4 minutes.
Scrape into crockpot, add meat and remaining ingredients to crockpot, stir well.
Turn crockpot on low simmer 8-12 hours.
Stirring occasionally.
Serve over cooked spaghetti.

Here is a quick and easy one that the kids will like


Tator-tot Casserole
1 bag frozen tator-tots
Package of hot dogs
1 can Wolf Brand Chili
1 cup cheddar cheese
Preheat oven to 350
Cut the hot dogs into pieces and place in a casserole dish
Spread chili on top of the dogs
Place tots in a single layer on top of the chili
Bake till tots are golden brown
Add cheese and place back in oven for and addition 10 minutes or till cheese is melted.
Serve with relish, onions, and/or sauerkraut

COWBOY CASSEROLE
8 oz. spaghetti
1 1/2 lb. hamburger
Salt and pepper to taste
1 tsp. garlic powder
1 tsp. chili powder
1 can cream of mushroom soup
1 can cream of tomato soup
1 tsp. Worcestershire sauce
Grated cheese
Cook and drain spaghetti. Brown hamburger. Add remaining ingredients and simmer 10 minutes. Pour into baking dish and top with cheese. Bake 30 minutes at 350 degrees.

This is not my recipe but it is good anyway.

Tunnel of Fudge Bunt Cake

1-3/4 cups butter, softened
1-1/3 cups granulated sugar
6 eggs
2 cups powdered sugar
2-1/4 cups flour
3/4 cup cocoa
2 cups chopped pecansPREPARATION:

Preheat oven to 350 degrees F. In large bowl, combine butter and granulated sugar and beat until mixture is light and fluffy. Add eggs, one at a time, beating throughly after each addition until eggs combine with batter.
Gradually add powdered sugar, mixing well. By hand, stir in flour, cocoa, and pecans until well blended.

Spray a 12 cup Bundt pan with nonstick baking spray with flour. Spoon batter into prepared pan. Bake at 350 degrees F for 58-62 minutes, until crust looks dry and shiny (traditional doneness tests won't work because of the soft fudge center). Cool cake in pan on rack for 1 hour, then invert onto serving plate and remove pan. Cool completely.

TEXAS RED CHILI

This chili contains no beans or tomatoes

5 lbs ground beef shoulder roast (it is illegal to substitute turkey or any other substance)
1 chopped onion
6 cloves garlic, chopped
1 thsp ground cumin
1 thsp ground Mexican Oregano
2 thsp paprika
4 oz chili powder
2 cups chopped chili peppers
3 thsp chicken bullion
1 cup strong black coffee (is there any other kind?)
2 squares unsweetened chocolate
¼ cup masa harina

For the broth

8 cups beef broth (Swansons)
2 stalks celery
2 carrots
1 large onion (unpeeled)
2 cloves garlic (whole)

combine all broth ingredients and bring to boil. Simmer for two hours. Strain broth.

Brown meat in small amount of oil. Remove from pan. Stir the onions and garlic until soft and light brown. Return the beef to the pot add all other ingredients. Add the broth and bring to a simmer. Add the chocolate and coffee. Simmer for at least 8 hours.

Add two sliced jalapeno peppers to mixture. Simmer for one more hour. Mix the ¼ cup masa harina with ¾ cup water to make a paste. Add to chili and stir until chili mixture thickens.

Although the chili can now be eaten its best to wait a few days to allow the flavors to marry! Serve with corn bread, rice or crackers.

GREEN ONION-JALAPENO CORNBREAD

3/4 cup all purpose flour
3/4 cup yellow cornmeal
1/4 cup sugar
1 1/2 teaspoons salt
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 cup thinly sliced green onions
2 teaspoons minced jalapeño chile with seeds
1 1/4 cups buttermilk
2 large eggs
1/4 cup (1/2 stick) unsalted butter, melted, cooled


Preheat oven to 350°F. Butter 13x9x2-inch metal baking pan. Whisk flour, cornmeal, sugar, salt, baking powder, and baking soda in large bowl to blend. Stir in green onions and jalapeño. Whisk buttermilk and eggs in medium bowl to blend, then whisk in melted butter. Add buttermilk mixture to dry ingredients and stir just until blended (do not overmix). Transfer batter to prepared pan (batter will come only about 3/4 inch up sides of pan). Bake cornbread until lightly browned on top and tester inserted into center comes out clean, about 25 minutes. Transfer pan to rack and cool cornbread completely in pan. (Cornbread can be prepared 1 day ahead. Cover tightly with foil and store at room temperature.)

Makes 10 servings.

Mexican Meatloaf
2lbs ground beef
1 cup Salsa
1 can Rotel
2 eggs
1-1 1/2 cups bread crumbs of oat meal(not instant)
1 pkg taco seasoning or just use 1 tbs chili powder.
1 cup cheddar cheese.

Mixx all ingredients together except for 1/2 cup salsa and bake like a regular meatloaf. At the last 10 minutes add the othe 1/2 cup salsa and cheese to the top and finish baking.

Serve with rice and beans

WARNING THIS IS A SPICY DISH but can be change to make less spicy
just replace the Rotel with diced tomatos.

Texas Oven Brisket

Makes 8 to 10 servings

This is an absolutely wonderful way to cook brisket. The result is tender, succulent and flavorful. And it’s practically foolproof. The wonderful aroma will fill your house and make you, and anyone else who comes along, impatient for it to get done.

· 5 to 6 lb. fresh beef brisket, well trimmed

· 1 cup barbecue sauce (your favorite)

· 1/4 cup Worcestershire sauce

· 1/4 cup liquid smoke

· 1 tablespoon garlic powder

· 2 teaspoons celery salt

· 2 teaspoons lemon pepper

· 1 teaspoon salt

· 1 cup chopped onion

· 1/2 cup water

Preheat oven to 275°F.

In a large Pyrex baking dish, thoroughly mix all ingredients for sauce. Put the brisket in the baking dish, and turn it over once to coat it with the sauce. Seal the dish tightly with heavy-duty aluminum foil.
Bake at 275°F for 5 to 7 hours (about 1 hour and 15 minutes per pound). Remove from oven and allow to stand for 1 hour before slicing. Slice across the grain, and serve with sauce.
Note: This recipe works well with a 5- to 6-pound brisket. Be sure to use a Pyrex baking dish or very heavy metal pan. Also, before you prepare the brisket, remove it from the refrigerator far enough ahead of time to allow it to come to room temperature.

1 (14 ounce) can sweetened condensed milk
1 (20 ounce) can crushed pineapple, drained
1 cup pecans, chopped (optional)
1 cup small marshmallows (optional)
1 (12 ounce) container frozen whipped topping, thawed


Combine all ingredients and mix well.
Serve chilled. Your family and friends will go nuts.

Here is what I am making for dinner:

California Casserole
casserole
1/3 c flour
1 tsp paprika
2 lbs boneless pork cut into 1 inch pieces
1/4 cup oil
1/2 tsp salt
1/8 tsp pepper
1 c water
1 can cream of mushroom soup
1 1/2 cup water
1 (16 oz) jar of small onions drained

dumplings
2 c flour
4 tsp. baking powder
1 tbsp poppy seed
1 tsp minced onion
1 tsp celery seed
1 tsp poultry seasoning
1/4 tsp salt
1/4 cup oil
3/4 to 1 cup milk
2 tsp melted butter
1/2 cup bread crumbs

sauce
1 can cream of mushroon soup
1 c sour cream
1/4 c milk

In a small bowl or plastic bag combine, 1/3 c flour and paprika. Shake well. Add pork coat well with flour mixture. In a large skillet, heat 1/4 cup oil over medium-high heat. Add pork and cook until browned. Add 1/2 tsp salt, pepperr, adn 1 cup water. Bring to a boil. Reduce heat simmer uncovered 30 minutes or until pork is tender. Transfer pork mixture to ungreased 13X9 inch baking dish.

In same skillet, combine 1 can of cream of mushroom soup and 1 1/2 cup water. Bring to a boil stirring constantly. Pour over pork mixture in baking dish. Add onions, mix well. Heat over to 425. IN a large bowl combine 2 cups flour, baking powder, poppy seed, minced onion, celery seed, poultry seasoning adn 1/4 tsp salt, mix well. Add 1/4 cup oil and just enough milk so that when stirred, dry ingredients are just moistened.

In small bowl combine butter and bread crumbs. Drop rounded tbsp of dough into the crumb mixture, roll to coat well. arrange dumplings over warm pork mixture. Bake at 425 for 20-25 minutes or until dumplings are a deep golden brown.

Meanwhile in a med saucepan combine all sauce ingredients. Bring just to a boil. Reduce heat and simmer 2 or 3 minutes, stirring frequently. Serve sauce with casserole and dumplings.
