Fried Green Tomatoes
3/4 cup self-rising flour
1/4 cup corn meal
1/4 teaspoon salt
1/4 teaspoon pepper
3/4 cup milk
3 to 4 (or 5) green tomatoes, cut into 1/4 inch slices
Vegetable oil
Combine the first 5 ingredients; mix until smooth. Add additional milk to thin, if necessary; batter should resemble pancake batter. Working in batches, dip tomato slices into batter, allowing excess batter to drip back into bowl. Fry in 2 inches hot oil (375 degrees) in a large heavy skillet until browned, turning once carefully with tongs. Transfer to colander or paper towels to drain. Serves 3 to 4 (or 5).
Like most of this kind of food, it really started getting to be a popular dish during the Depression. People would fry up most anything and pretend it was meat or fish, and actually as it turned out, a pitcher full of sweet iced tea and a plate of fried green tomatoes turned out to be a delightfully tasty and light summer supper on nights when it was so hot you didn't feel like having a big heavy meal.
So some hot summer night, fix yourself a plate of fried green tomatoes and a pitcher of iced tea, and go out on the screen porch and watch the fireflies and listen to the sounds of night birds and the crickets instead of the six o'clock news. You'll never regret it.
